Gluten-Free (almost Vegan) Cranberry Crumble Bars

You could say I’ve been having a trickier time sticking to this diet through the holiday season than I might have thought, but I’m determined. So I did it. I baked something gluten free AND almost vegan (there’s just a small bit of honey in the Kind Snacks clusters). I even used coconut sugar, and YOU GUYSSS — they turned out delicious. This was the perfect holiday recipe for me so I had to share! Read more below.

Ingredients
Crust
+ 1 cup kind snacks oats & honey clusters with toasted coconut
+ 1 cup whole raw almonds
+ 1/4 teaspoon salt
+ 3 tablespoons coconut sugar
+ 1/4 cup + 1 Tablespoon coconut oil, melted

Filling
+ 3 cups of fresh cranberries, halved
+ 1/4 cup orange juice
+ 1 tablespoon orange zest
+ 1 tablespoon coconut sugar
+ 1 tablespoon cornstarch

Crumble Topping
+ 6 tablespoons coconut sugar
+ 4 tablespoons gluten-free all-purpose flour
+ 1/2 cup kind snacks oats & honey clusters with toasted coconut
+ 3 tablespoons coconut oil

Instructions
Preparation
+ Preheat oven to 350° F.
+ Line your pan with parchment paper (I used a 9″ x 13″ pan). Set aside.

Crust
+ Place oats, almonds, salt, and sugar in food processor; pulse into a fine meal.
+ Add oil; pulse to mix. It should form a loose dough that sticks together when squeezed. Add more oil if too dry.
+ Spread oat mixture into prepared pan, evenly.
+ Bake for 15 minutes.
+ Increase heat to 375º F. Bake an additional 2-5 minutes or until your edges are brown.
+ Remove from oven & reduce the temperature to 350º F.

Filling
+ Heat cranberries, orange juice, orange peel, sugar, and cornstarch in medium saucepan over medium heat, stir frequently and mash for about 5 minutes, or until bubbly. Set aside.

Topping
+ Combine sugar, flour, oats and oil in a small mixing bowl; mix. Set aside.
+ Add cranberry mixture to crust; spread evenly.
+ Top with crumble topping; cover cranberries evenly.

Bake
+ Bake for 15 to 20 minutes, or until cranberry filling is warm and bubbly and topping is golden brown.
+ Cool completely for 1 hours. Lift parchment paper from pan & cut.
