The Easiest, Baked Apple Cider Donuts

I have to admit it really doesn’t feel like fall here in Phoenix. Temperatures last week even were into the high 80’s and the forecast doesn’t seem to be cooling down anytime soon. That being said I’m bringing on the fall vibes regardless. A couple mornings ago I woke up extra early and baked these apple cider donuts before the rest of the house was up. They we’re ultra easy, delicious, they pair perfectly with coffee and once you pick up these ingredients you’ll be set to make them over and over again this season. Enjoy!

for doughnuts
*makes a dozen
+ 6 tablespoons unsalted butter
+ 2/3 cup apple cider
+ 2 cups all-purpose flour
+ 2 teaspoons baking powder
+ 1/2 teaspoon salt
+ 1 teaspoon cinnamon
+ 1/2 teaspoon ginger
+ 1/2 teaspoon nutmeg
+ 1/2 cup sugar
+ 2 large eggs

for topping
3 tablespoons butter
1/3 cup brown sugar
1/3 cup white sugar
2 teaspoons cinnamon

+ Preheat oven to 350 degrees.
+ Melt the butter, stir in apple cider and set aside.
+ Whisk together the flour, baking powder, salt, and spices in a medium bowl. Set aside.
+ Whisk the sugar and eggs into the cider and butter mixture until combined.
+ Stir together the wet and dry ingredients until just combined.
+ Spray the donut pan, add batter into the pan.
+ Bake for 7 minutes or until a toothpick comes out clean.
+ While the donuts are baking, make your topping.
+ Melt the butter and set aside.
+ In a separate small bowl, stir your dry ingredients together.
+ Dip each donut in the butter mixture, into your dry mixture & return to the cooling rack.
