The Perfect Comfort Food: Baked Homemade Macaroni and Cheese

What’s your favorite comfort food? I’ve always loved macaroni and cheese, but this recipe is particularly special. It’s the one we ate in Phoenix with our best buds before Owen was born and the same one we made in NYC after they made their way east. It’s super simple to make and even came in handy for me when Owen was a newborn. Scroll through for the recipe from Punch & Pastry!

+ 1 box noodles
+ 1 stick butter
+ 1/2 cup flour
+ 1/4 gallon milk
+ 5 cups sharp cheddar, shredded
+ Salt to taste
+ 1 tablespoon Dijon mustard

+ Cook pasta and set aside.
+ In a large pot melt butter.
+ Next make a roux – add flour and stir until a thick paste forms.
+ Slowly add milk until a creamy and slightly thick consistency.
+ Add mustard.
+ Add cheese and stir until melted.
+ Pour over noodles.

If you want to bake it:
Top with shredded cheese and bake at 375 degrees until golden brown.
