A Simple Salad Everyone Will Love

You guys! You guys! This is big. I’ve never been the best at delegating. I was the kid in your group project who just did the entire project because in my head it would just be easier for everyone. Yikes.

That being said, I think I’m growing up. When I first started Household Mag. and even through us living in NYC I shared recipes all the time. I had the same hopes for our life on the road, but it’s been trickier than I expected to cook in unfamiliar kitchens in unfamiliar cultures.

I’ve missed sharing recipes I love with you all the last few months, and started to brainstorm about ways I could bring them back to life. It didn’t take long for me to connect the dots. Leah, of Punch & Pastry, is always my go to girl for recipes (and life). She’s in NYC near my go to photographer (and baby whisperer), Amy, and I thought, “Okay Hailey, now is the time. Let go of control and place it in these very capable ladies hands.”

So here we are! These two are joining forces, making delicious plates, photographing them and I’m sharing the recipes here with you. It’s all about teamwork people! I’m feeling good about it. Plus, they both have a handful of my old kitchen items so there are pieces of our little 36-square-foot kitchen in these photos.

We’re starting out with this ultra simple salad that everyone will love. My intention with this recipe was to share something that is not only visually pleasing, but something that both kids and parents will enjoy that can easily be whipped together. With school back in session I can imagine that everyone is just looking for anyway to ease their way back into the groove, so we’re here to help.


Melon Mozzarella Simple Salad

+ 1/4 cantaloupe, chopped
+ 1/2 honeydew, chopped,
+ mozzarella balls
+ basil, to taste
+ 1/4 c arugula
+ olive oil
+ pesto, if desired
+ blueberries, for garnish

Instructions: Cut melons into desired shapes. Mix basil and arugula with a splash of olive oil. I put the greens down then added my fruit & cheese. Salt, to taste.
