A Summer Salad That Inspires Kindness

Keeping kindness top of mind sounds like something simple to do in our relationships, but I’m the first to admit that it’s the people closest to us that often times get the short end of the stick. I’m always looking for new ways to approach life with a little more kindness and I’ve found that one of the easiest, most appreciated ways to show my love, gratitude and care for the people around me is by simply making a home cooked meal for others.

There are moments in our lives where this seems more customary than others – an anniversary, a promotion, a birthday or another milestone, but in all honesty, I find that the “I want to cook you breakfast, lunch or dinner just because” sentiment is that much more meaningful. There’s something about the unexpected gesture that is where the heart of kindness lives if you ask me.

That being said, when Inspire Kindness reached out to me about partnering for this post, my mind immediately went to grand gestures of kindness. In a world of social media where more is more and bigger is better, it’s where I assume a lot of people’s minds would jump to. But, after really thinking about it, I realize that as sweet as those grand gestures can be, everyday, simple acts of kindness are where it all starts and what we all could use a little more of in our lives. I know whenever someone offers to help me with my stroller, smiles on the subway instead of avoiding eye contact or holds the door for me, I’m that much more likely to repay the favor.

Ingredients

  • 1 pineapple, skinned and diced
  • 1 cucumber, diced
  • ½ red onion, peeled and diced
  • 1 jalapeño, seeded and diced
  • Dash of cilantro, finely chopped
  • 1 lime, juiced
  • 1 tablespoon Sriracha
  • 4 slices of bacon, cooked and chopped (optional)
  • Tortilla chips

Instructions

  • In a large skillet, over medium heat, cook bacon until crispy. While your bacon cooks, follow the rest of the instructions. Remove bacon from heat and set aside once you’ve reached your desired consistency.
  • Skin and dice your pineapple. Place into one large mixing bowl.
  • Slice and dice your cucumber, peel and dice your red onion and dice your jalapeño (making sure to remove all seeds). Place into the same large mixing bowl as your pineapple.
  • Chop cilantro and set aside.
  • In a small mixing bowl juice your lime, add in your Sriracha and mix. Once fully combined add to your salad and mix.
  • Chop bacon.
  • Portion your salad into up to four bowls, top with bacon and cilantro and serve with a side of tortilla chips.
  • Enjoy!
